Ingredients

Scale

100 g flora buttery/margarine (softened)

100 g caster sugar

1/2 tsp vanilla extract

2 large eggs

100 g self raising flour


Instructions

1. Preheat your oven to 160°C (fan) or 180°C (conventional), gas mark 4.

2. Grease two 5″ cake tins or line with parchment.

3. Cream butter and sugar until light and fluffy.

4. Gradually add eggs and vanilla extract. If it curdles, add a little flour.

5. Fold in the flour gently. Scrape down the bowl sides.

6. Divide batter evenly using a scale, dip the center slightly.

7. Bake for 25 minutes or until a skewer comes out clean.

8. Cool 10 minutes in tin, then transfer to wire rack.

9. Wrap in cling film once fully cool. Decorate as desired.

Notes

This recipe makes two small sponge layers, ideal for a 5-inch bento cake.
